The oak casks used at Brewery Boon each have their own history and are characterized by unique microflora of wild yeast strains. Bottles of traditional Oude Geuze with cask numbers combine beer from one specific wooden cask (mono brew) with a very small quantity of young lambic (blend) that will kick off the bottle conditioning process. By using lambic from certain oak casks, the geuzes created have very unique properties, with wine or whiskey-like flavors. Either very dry or very gentle. The number on the bottle always refers to the number of the cask.
The very wine-like accents in this Traditional Oude Geuze are combined with a distinctive ‘old beer’ character, which gives it a full-bodied and robust flavor, with unmistakable hints of volatile acidity that never overwhelm the senses. Cask no.108, dating from 1935, came to us from a different brewery, whose beers contained some volatile acidity. The foeder now adds a bit of character to all of our geuze blends. 8.0% ABV
